Temple (525 Fort St., 250/383-2313, Mon.–Sat. from 4 p.m., $18–32) disregards Victoria’s reputation as a bastion of old English culture completely, although you’d never know it from the exterior of the restored heritage building. But step inside and you enter a bright, contemporary room filled with smartly dressed diners relaxing on a lounge, seated at the glass bar, or chatting about sweet nothings in the “confessional room.” The menu reflects the ambience, with modern presentations of dishes dominated by organic ingredients sourced from throughout the island.
