Set up by three men hailing from China’s southerly Guizhou, this restaurant showcases the cuisine of their native province. Guizhou food is characterized by the piquant paocai pickle, which plays a part in many dishes.
Try the mashed potato, steamed ribs with picked greens, and the enigmatically named Ants on a Tree—rice noodles with minced pork and peppers. Other top picks include xiangbai bohe (peppermint salad) and suantang yu (sour fish soup).
There are three branches of Three Guizhou Men in Beijing, and this one is the most laid back and bohemian. It’s open around the clock and is a good post-clubbing option if you don’t fancy braving the noisier Bellagio.
