Custer, Tony. The Art of Peruvian Cuisine. Lima: Cimino Publishing Group, 2003. This book has high-quality photos and an excellent selection of Peruvian recipes in both Spanish and English.
Morales, Edmund. The Guinea Pig: Healing, Food, and Ritual in the Andes. Tucson, Arizona: University of Arizona Press, 1995. This is the first major study, with good pictures, of how Andean highlanders not only eat guinea pig but also use it for medicinal and religious purposes.
PromPeru. Peru Mucho Gusto. Lima: Comisión de Promoción del Peru, 2006. This Spanish-English book is the latest of Peru’s glamorous large-format cookbooks. Starting with the history of the country’s cooking, the book gives a general overview of Peru’s traditional cooking.
