Chiapas [1] has a number of homegrown culinary specialties, which, together with San Cristóbal [2]’s international flair, can make for a rich dining experience. A few upscale restaurants are worth splurging on, but most of the city’s best meals, including plenty of vegetarian options, are served at simple restaurants and hole-in-the-wall eateries, whether for falafel, tamales, fresh sandwiches, or homemade pasta.
