Chef Laurent Tourondel’s modern American steakhouse, BLT Steak (5402 E. Lincoln Dr., 480/905-7979, www.bltscottsdale.com [1], 6–10 p.m. Sun.–Thurs., 6–11 p.m. Fri.–Sat., $15–48) brings a bit of New York chic to Paradise Valley’s Camelback Inn [2]. The long, dark-wood bar and reclaimed mesquite wood floors seem to disappear, though, when the lineup of certified Black Angus, Kobe, and Wagyu steaks arrive, not to mention the signature gruyère popovers and twice-baked sweet potatoes. The three-course prix fixe Blackboard Menu ($60) allows diners to sample Tourondel’s mastery in action.
